In the tea garden, tools such as "yoshizu" (bamboo blinds) and "kanreisha" (shade netting) are used to cover the plants, blocking sunlight and promoting the growth of the leaves under shaded conditions. This helps the leaves to develop a vibrant green color and enhances their umami flavor.
The picked leaves are steamed and then dried. Unlike other types of tea, they are not subjected to the "kneading" process. The product at this stage is called "tencha," and when it is carefully ground using a stone mill, it becomes "matcha."
