Calico House is a brand of horizon-searching spirits nerds. We focus on unique, compelling stories; ones that are hard to tell but compelling to learn about and taste. The bourbon in this bottle was distilled 1/28/21 and entered into a 36 month cured, virgin french oak barrel made from 100+ year old trees. Dancing Goat Distillery produced this high rye bourbon recipe and entered into this barrel as a journey/experiment in what the world's fanciest wood would do over time. We fell in love when we tasted it. Water was added 70ml per day until the bourbon found an optimized balance of power and elegance.

Tasting Notes: Rich and assertive at 122 proof, this high-rye bourbon opens with aromas of spiced orange peel, toasted hazelnut, and vanilla from its 36-month cured French oak barrique. The palate is bold yet refined, offering layers of cinnamon, cherry compote, and roasted almond, with a vibrant lift of black pepper and citrus from the 44% rye. A long, dry finish lingers with notes of fig, clove, and spearmint, showcasing both the oak’s elegance and the mash bill’s intensity.
