Forget Old World; we're going Old, Old, Old World. Zedashe was founded only a decade ago, but it carries the 8,000 year-old tradition of winemaking in Kakheti. Built into an ancient monastery, they're keeping up with Georgia's typical winemaking approach: hands-off, little manipulation, and aging in traditional Qvevri (clay amphorae). Saperavi is Georgia's chief red grape, and it's showcased here in its purest form: dark, rich, and packed with blackberry, plum, spice, and a little earthy edge, with plenty of structure to back it up. Perfect with grilled or braised meats, reach for this if you love Cabernet or Syrah but want something a little wilder (and way more ancient).
