Enzymes play an important role in our lives. The three major nutrients – carbohydrates, proteins and fats, can be absorbed only after being broken down into simpler ingredients by digestive enzymes which are secreted in the gastrointestinal tract through the wall of the gastrointestinal tract and digestive organs such as the salivary glands, the stomach, the liver and the pancreas.

The main digestive enzymes are amylase, protease, lipase, cellulase, and lactase. They break down starch, protein, fat, fiber and milk sugar (lactose) respectively.
