This exceptional balsamic vinegar from Modena, Italy, is crafted from the carefully cooked grape must of Trebbiano and Lambrusco grapes and finally the juice of Pear and Cranberry. Aged slowly in high-quality wooden barrels made of oak, mulberry, chestnut, and juniper, it develops a sweet, dense character (with a high density of 1.34) and an intense, velvety aroma. Its aging process also imparts a lightness and a delicate acidity (4.5%), making it a perfect balance of richness and elegance.
It works best on mixed greens with hard cheeses, a glaze for roasted Brussel sprouts, and a marinade for poultry, seafood. Stir into yogurt, or mix with a sparkling water for a refreshing spritzer.
