Tasting notes
Rich aromas of raisins, dried figs, dried mango, cashew nuts, cinnamon, and a hint of toasted soy sauce. On the palate, it features the sweetness of dried fruits like prunes, gentle tannins, and a pleasant nuance of oak. The lingering finish is marked by the lasting sweetness of dried fruits. While it pairs beautifully with meals, it is also highly recommended for slow, relaxing moments after dining. For the best experience, enjoy it on the day the bottle is opened.

Food pairing
Roasted duck with soy-based glaze, shigureni-style simmered beef, grilled eggplant with sesame sauce, grilled chicken skewers (yakitori), grilled eel with sweet soy glaze, grilled lamb, porcini mushroom risotto, grilled Camembert cheese with dried fruits, pound cake with dried fruits.

Winemaking
This red wine was vinified by winemaker Hirotaka Meguro using grapes sourced from three farming families in Kaminoyama, Yamagata Prefecture, with whom Fattoria AL FIORE has been working since 2021. The blend is primarily composed of Cabernet Sauvignon, complemented by a small amount of Hokujun—a rare, China-origin grape variety that has become increasingly scarce in Japan—and Japan’s native variety, Muscat Bailey A.

The grapes harvested from mid to late October were vinified on the same day they were picked. The grapes were destemmed and fermented separately in resin tanks. Maceration lasted 35 days for the Cabernet Sauvignon and 30 days for the Hokujun, after which they were pressed. The Cabernet Sauvignon was aged in old barrels, while the Hokujun was matured in stainless steel tanks, for approximately nine months. The  wines were then blended and bottled in November 2023.
